Watermelon Lemon Blueberry Popsicles – Gluten Free, Vegan

I love summertime, especially now that I have kids. Even when it’s a billion degrees outside there is just something so fun about the season.
Going to the pool, running through the sprinkler, playing at the park, and of course enjoying wonderful summertime food like these Watermelon Blueberry Lemon Popsicles.
Growing up, popsicles were one of my favorite summer treats, next to ice cream of course. We used to get the freezer pops that came 100 in a pack for around $3.00.
They were delicious, but were full of terrible ingredients! High fructose syrup is the second ingredient, no thanks!
I decided these types of popsicles probably weren’t going to be an option for my kiddos, but didn’t want them to miss out on the delicious summer treat.
So of course I needed to figure out how to make them at home. Turns out it’s so easy to make healthy and delicious popsicles homemade!
My husband and daughter love tart things so we decided our first batch would be watermelon, blueberry, and lemon.
They turned out so tasty! They are sweet with just a hint of a tart flavor from the lemon. All we had to do was purchase some popsicle molds, blend up all the ingredients, pour the liquid into the molds, and freeze for a few hours.
The best part is my daughter got to help. She thought it was such a fun thing to do and it made the whole process really special.
We just bought another huge watermelon so I think we will try another flavor combination soon. What are some of your favorite Popsicle flavors?

Ingredients
- 3 cups watermelon
- 1 cup blueberries (fresh or frozen)
- 1 lemon, juiced
Instructions
- Blend all of the ingredients together and pour into a popsicle mold.
- Freeze for 4 hours and enjoy!
