Turkey or Beef Meatloaf – Gluten Free, Dairy Free, & Egg Free

Ingredients

  • 1 1/2 lbs ground beef or ground turkey
  • 3/4 cup gluten free oats
  • 3/4 cup dairy free milk of choice (I use “So Delicious Unsweetened Coconut Milk”)
  • 1 tbsp flaxseed meal*
  • 3 tbsp warm water*
  • 1/2 cup onion, chopped
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup ketchup
  • 1 tbsp coconut sugar
  • 1 tbsp mustard

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine flaxseed meal and warm water and stir to combine. Set aside for 5 minutes to firm up.
  3. In another small bowl, mix together ketchup, mustard, and coconut sugar, set aside.
  4. In a large bowl, add meat, oats, milk, flaxseed mixture, onion, salt and pepper. Stir the mixture just enough to combine all of the ingredients. Do not over mix.
  5. Transfer the meat mixture into a large loaf pan and press the mixture down gently into the pan.
  6. Top with the ketchup, mustard, and coconut sugar mixture and spread evenly over the meatloaf.
  7. Bake for 1 hour and 20 minutes.*

To Freeze and Cook Later

  1. In a small bowl, combine flaxseed meal and warm water and stir to combine. Set aside for 5 minutes to firm up.
  2. In another small bowl, mix together ketchup, mustard, and coconut sugar, set aside.
  3. In a large bowl, add meat, oats, milk, flaxseed mixture, onion, salt and pepper. Stir the mixture just enough to combine all of the ingredients. Do not over mix.
  4. Transfer the meat mixture into a large loaf pan and press the mixture down gently into the pan.
  5. Top with the ketchup, mustard, and coconut sugar mixture and spread evenly over the meatloaf.
  6. Cover the loaf pan with plastic wrap and then cover the plastic wrap with aluminum foil. Freeze for up to to three months.
  7. When ready to cook, thaw overnight in refrigerator.
  8. Follow cooking directions above.

Notes

  • You can use 1 egg in place of the flax seed meal and water if you aren’t allergic to eggs.
  • This meatloaf can also be made in muffin tins to cut the baking time down to only 30 minutes!
  • Just scoop the meatloaf into muffin tins, top with the ketchup, mustard, and coconut sugar mixture, and bake for 30 minutes at 350°F.
