- 16 ounces of tofu (preferably extra-firm)
- 4 tablespoons of coconut aminos (or other gluten-free soy sauce substitute)
- 3 tablespoons of rice vinegar
- 1 tablespoon of maple syrup
- 1 teaspoon of sesame oil
- 2 garlic cloves
- 1 tablespoon fresh ginger
- Up to 3 tablespoons of neutral-flavored oil

Step #1: Press the Tofu
First, cut the tofu into cubes and then lay it on a flat surface lined with paper towels. Cover it with another layer of paper towels and set it with something heavy (book, pan, baking sheet, etc.). Keep it like that for about 15 minutes.
