Taco Roasted Chickpeas – Gluten Free, Vegan

These Roasted Garbanzo Beans are perfect for a quick snack, tacos, or even as a salad topper! These crispy chickpeas are so versatile and taste amazing with taco seasoning! They are also naturally gluten free and vegan!

I love making homemade snacks like these Taco Roasted Chickpeas! They are one of my favorite snacks to make because they are so easy and super healthy!

Any time I am craving chips, I make a big batch of these roasted chickpeas to enjoy instead. They do a great job satisfying my craving and help me keep my snacking healthy.

Roasted garbanzo beans are also so versatile! For this recipe, I use my favorite homemade taco seasoning.

You can make them with so many different seasoning mixes. Ranch seasoning and BBQ seasoning are some of my other favorite ways to make roasted garbanzo beans!

Not only are these taco roasted chickpeas the perfect snack, but they are also amazing in vegan tacos!

Add some guacamole, salsa, the works and you have a delicious and easy meal!

I also like to top my salads during the week with them. They are an awesome way to get some extra protein and add some crunch to a salad.

So let’s talk about how easy it is to make taco roasted chickpeas!

ROASTED CHICKPEAS RECIPE INGREDIENTS:

  • Chickpeas: Also called garbanzo beans.
  • Olive oil: Using the full 2 tbsp of olive oil will make the chickpeas crispier. You can use less if desired, but the chickpeas will not be as crispy.
  • Taco seasoning: This is the homemade taco seasoning recipe I use, but you can also use store bought taco seasoning.

HOW TO COOK CRISPY CHICKPEAS:

  1. Preheat the oven: 400°F.
  2. Rinse and dry chickpeas: Rinse and drain chickpeas.  Dry the chickpeas well using a dish towel or paper towel.
  3. Season chickpeas: Add the chickpeas to a medium sized bowl. Add olive oil and seasoning to the bowl and stir to coat the chickpeas evenly.
  4. Bake: Place chickpeas on a sheet tray lined with parchment paper. Bake for 30-40 minutes stirring every 15 minutes or until desired crispiness is reached.

HOW TO STORE OVEN ROASTED CHICKPEAS:

  • Once completely cool, store in an airtight container for up to 5 days at room temperature.
  • The chickpeas are crispiest when they are fresh.  They will be less crisp after they are stored, but they will still be delicious!
