I love making Strawberry Banana Icebox cake especially in the summer months.

It’s such a fresh dessert and tastes amazing!

There is just something so delicious about the combination of graham crackers, whipped cream, and fresh fruit!

This strawberry banana icebox cake is also super easy to assemble.

All you need are gluten free graham crackers, dairy free whipped cream, strawberries, and bananas.

I personally like to make homemade graham crackers for this recipe.

They taste more like traditional graham crackers to me than the store bought do, but store bought will work great too if you don’t have time to make your own!

I also typically double my recipe for homemade dairy free coconut whipped cream when I make this.

STRAWBERRY BANANA ICEBOX CAKE RECIPE INGREDIENTS:

This Strawberry Banana Icebox Cake is gluten free, dairy free, vegan, and tastes AMAZING! It's such a simple dessert with SO much flavor! #glutenfree #dairyfree #vegan #dessert #iceboxcake

HOW TO MAKE STRAWBERRY BANANA ICEBOX CAKE:

  1. Prepare Graham Crackers and Whipped Cream: If using homemade graham crackers and coconut whipped cream, prepare according to the recipe instructions.
  2. Add whipped cream to dish to prevent sliding: Add a small amount of dairy free whipped cream evenly to the bottom of an 8×8 dish.
  3. Start Layering: Layer graham crackers evenly over the whipped cream, breaking as necessary. Top graham cracker layer with 1/3 of the whipped cream.  Spread evenly with a rubber spatula. Add sliced strawberries and bananas evenly over the whipped cream layer.
  4. Repeat Layers: Repeat step 3 two more times for a total of three layers of graham crackers, whipped cream, strawberries, and bananas. I recommend waiting to add the sliced bananas to the top layer until you are ready to serve otherwise the exposed bananas will get a bit brown in the refrigerator. 
  5. Refrigerate: Cover and refrigerate at least 4 hours. 
  6. Serve: Top with sliced bananas when you are ready to serve.

  1. I love the simplicity of this dish, even with making the graham crackers, which I know would be well appreciated at my house. Now I want to make all of them, including the coconut whipped cream. I don’t have an electric mixer, and hope my stick blender will work. Do you think it would? B

    1. Thank you! For the graham crackers, I would just use a rubber spatula to mix until the dough forms. It might be a bit of a workout, but it will get the job done. For the coconut whipped cream, I think a stick blender should work. If it has a low setting, I would start out with that since stick blenders are usually a bit faster than regular mixers.
