These Southwest Quinoa Wraps are one of my all time favorite meals to have during the week!
They are perfect for lunch or dinner and are packed with flavor!
This recipe is also super versatile. You could add bell peppers, onion, or any other veggie you like.
For this recipe, I used BFree Multigrain Wraps. They are low in calories, high in fiber, and roll up perfectly without breaking (which is hard to come by with gluten free wraps!).
The BFree wraps are are also available at Walmart which is super convenient! They are also gluten free, vegan, dairy free, and egg free. Perfect for anyone with multiple food allergies!
So let’s talk about how you make these healthy southwest quinoa wraps!
GLUTEN FREE AND VEGAN SOUTHWEST QUINOA WRAPS RECIPE INGREDIENTS:
- 1/2 cup dry quinoa (about 1 1/2 cups cooked)
- 1 cup low sodium vegetable broth
- 1 15 oz. can of black beans, rinsed and drained
- 1 cup corn
- 2/3 cup of mild salsa
- 1/4 cup cilantro, chopped
- 1 packet of taco seasoning or this homemade recipe
- 4 gluten free and vegan wraps (I use “BFree Wraps“)
HOW TO MAKE GLUTEN FREE AND VEGAN SOUTHWEST QUINOA WRAPS:
- Cook quinoa in the vegetable broth according to package directions.
- Add all ingredients to a bowl except for the taco seasoning. Mix to combine.
- Add half of the taco seasoning mix and stir to combine.
- Taste the mixture to determine if the other half of the taco seasoning is desired (we use all of it, but that may be too much seasoning for some).
- Add the other half of the taco seasoning if desired and stir to combine.
- Spread the quinoa mixture evenly over the wraps.
- Fold the ends of the wraps and roll. Cut in half and serve.
That’s all there is to it! A healthy gluten free and vegan meal ready to go!
I hope you enjoy these Southwest Quinoa Wraps as much as I do!
