Easy Pulled Chicken – Gluten Free, Dairy Free
This easy pulled chicken is one of my favorite quick meals to make! The chicken is so juicy and tastes amazing! It can be made in a slow cooker or an Instant Pot for an even quicker dinner!

Slow cooker / Instant Pot shredded chicken is on of my favorite meals to make each week.
It’s SO easy to make and only requires 5 ingredients!! It’s also the best way I have found to make amazingly juicy chicken!
I usually make up a bunch of shredded chicken on Sunday’s during meal prep.
I divide the chicken out into 4 servings and stick it in my lunch containers for the week.
Then I will usually add my favorite BBQ sauce to 2 of the lunches. The remaining lunches will get mixed with some delicious coconut aminos.
That way, even though I am having chicken for lunch 4 days in a row, they have different flavors.
There are so many different sauce options that you could add to this chicken to make each day even more unique.
I usually also make up a big batch of my favorite Balsamic Roasted Vegetables and some quinoa to finish off the lunches.
The whole meal together is SO tasty and having lunch prepped and ready for the week is a HUGE relief.
When you have food allergies, it is key to have as much food prepared ahead of time as possible so you don’t find yourself hungry with nothing to eat.
This shredded chicken can be made in your slow cooker or instant pot. I will share directions for both below.
So let’s make some!
EASY PULLED CHICKEN RECIPE INGREDIENTS:
- Chicken breast
- Broth (vegetable broth or chicken broth work best)
- Minced onion
- Garlic, minced
- Salt and pepper
TO MAKE INSTANT POT SHREDDED CHICKEN:
- Add 1 cup of broth to the instant pot. Place the chicken breast in the instant pot. Top with the remaining 1/2 cup of broth.
- Add the minced onion evenly over the chicken breast. Coat the chicken breast with the minced garlic.
- Close the lid and make sure you are NOT venting. Select the poultry setting which should default to 20 minute cook time on the normal mode.
- Allow for a natural release or do a quick release using a towel to make sure you don’t get burned.
- Remove the chicken from the instant pot and shred with two forks.
- Add salt and pepper to taste.
TO MAKE SLOW COOKER SHREDDED CHICKEN:
- Add 1 cup of broth to the slow cooker. Place the chicken breast in the slow cooker. Top with the remaining 1/2 cup of broth.
- Add the minced onion evenly over the chicken breast. Coat the chicken breast with the minced garlic.
- Place the lid on the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.
- When the chicken is done, remove it from the slow cooker and shred it using two forks.
- Add salt and pepper to taste.

- Add the minced onion evenly over the chicken breast. Coat the chicken breast with the minced garlic.
To make in the slow cooker:
- Place the lid on the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.
- When the chicken is done, remove it from the slow cooker and shred it using two forks.
- Add salt and pepper to taste.
To make in the instant pot:
- Close the lid on the Instant Pot and make sure you are NOT venting.
- Select the poultry setting which should default to 20 minute cook time on the normal mode.
- Allow for a natural release or do a quick release using a towel to make sure you don’t get burned.
- Remove the chicken from the instant pot and shred with two forks.
- Add salt and pepper to taste.
