Peach Filling Ingredients

  • 4 1/2 cups fresh or frozen peaches, peeled, pitted, and thinly sliced (or 2-15oz cans sliced peaches)
  • 1/4 cup coconut sugar (or brown sugar)
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 3 tbsp vegan butter, melted (I use “Earth Balance vegan buttery sticks”)

Topping Ingredients


Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, add all peach filling ingredients and stir to coat the peaches.
  3. Pour the peach filling in an 8×8-inch baking dish and spread evenly in the dish.
  4. Combine all of the topping ingredients, except the cubed butter, and stir to combine.
  5. Use a fork or pastry cutter to cut the cubed butter into the topping mixture.
  6. Sprinkle the crumb topping over the peaches evenly.
  7. Bake for 30 minutes until the top is set.
  8. Allow to cool 10 minutes before serving.
