Peach Filling Ingredients
- 4 1/2 cups fresh or frozen peaches, peeled, pitted, and thinly sliced (or 2-15oz cans sliced peaches)
- 1/4 cup coconut sugar (or brown sugar)
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 3 tbsp vegan butter, melted (I use “Earth Balance vegan buttery sticks”)
Topping Ingredients
- 1/2 cup gluten free all purpose flour (I use “Better Batter“)
- 1/2 cup gluten free oats (I use “Bob’s Red Mill Gluten Free Quick Cooking Oats“)
- 1/2 cup coconut sugar (or brown sugar)
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Dash of salt
- 1/3 cup vegan butter, cubed (I use “Earth Balance soy free vegan buttery sticks”)
Instructions
- Preheat oven to 375°F.
- In a large bowl, add all peach filling ingredients and stir to coat the peaches.
- Pour the peach filling in an 8×8-inch baking dish and spread evenly in the dish.
- Combine all of the topping ingredients, except the cubed butter, and stir to combine.
- Use a fork or pastry cutter to cut the cubed butter into the topping mixture.
- Sprinkle the crumb topping over the peaches evenly.
- Bake for 30 minutes until the top is set.
- Allow to cool 10 minutes before serving.
