Healthy Chocolate Mug Cake – Gluten Free, Vegan, Refined Sugar Free

Ingredients

  • 1/4 cup oat flour
  • 1/4 cup almond flour 
  • 1/4 cup coconut sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dairy free milk of choice (I use “So Delicious Unsweetened Coconut Milk”)
  • 1 tbsp maple syrup 
  • 1/2 tsp vanilla 
  • 1/4 cup vegan chocolate chips (optional, I use “Enjoy Life” brand)

Instructions

  1. Whisk together dry ingredients in a small bowl.
  2. Add wet ingredients and whisk until combined. 
  3. Mix in chocolate chips.  
  4. Pour the batter into two microwave safe mugs.  Make sure you get roughly the same amount of batter in each much so they cook evenly.  
  5. Microwave on high for 3 minutes and 20 seconds.*  
  6. Allow to cool about 10 minutes before eating.
  7. Optionally top with dairy free whip cream/ice cream and strawberries.  

Notes

  • Not all microwaves cook the same.  I advise watching the cakes while they cook the first time you make them to insure they do not overcook.  Check them around 2 1/2 minutes to see if they are done.  The cakes will be done when no liquid remains on top of the cakes.
