Would you believe me if I told you that I didn’t start eating avocados until I was 28?  I know it sounds crazy, but I had completely written off avocados as “gross”.  

My whole life I based my opinion on a lot of food solely on how it looked and avocados did not make the cut. After I had my daughter though, I told myself that I would try anything I was making her try and she LOVES avocados.  

So I took a big ole bite of plain avocado and almost puked in the kitchen.  This was years ago and I had no interest in trying them again. I honestly thought people who ate avocados were crazy! 

So fast forward two years since the “Avocado Incident” to my husband and I on our first big trip since having our daughter. We went to Portland, Oregon which turned out to be an amazing place to go if you have food allergies.

I was so worried the whole way up there that I would be eating the gluten free oatmeal I brought and plain steak or chicken everyday, but man was I surprised.  

I know I’ve mentioned this is other posts, but if you ever visit Portland and have food allergies, you HAVE to go to Petunias Pies and Pastries. Everything is gluten free and vegan. I repeat EVERYTHING is gluten free and vegan.  

It was like going into a bakery before I had food allergies where I could have anything and everything in the place which is unheard of now with allergies. 

So the next place we went, after stuffing our faces full of cake, cookies, and biscuits and gravy, was a brewery.  Portland is full of them.  

Now I obviously couldn’t have the beer but the brewery we went to also made their own hard apple cider and it was delicious!  

I ended up getting nachos to eat (I was on vacation after all) and as they brought out this delicious looking pile of nachos I noticed the dreaded glob of guacamole planted right on top.  Ugh!

So as I started to scrape off the guacamole and remove any chips that had come in contact (like you would imagine a child would do) my husband very maturely said “why don’t you just try it, I bet you will love it”.  

So I decided to be “brave” and dipped a chip in the tiniest amount of guacamole possible and took a bite……….ummm what??!  

Did you guys know how delicious guacamole is???  

Why, why, why did no one force me to try guacamole before, why?  Sure I don’t like avocados plain, but you throw in some onion, tomato, cilantro, garlic, and salt and it’s a whole new world!  

I’ve literally made guacamole every single week since we got back from that trip six months ago. I’ve also started to make other things with avocado like avocado mousse and avocado frosting.

Seriously, I don’t even know who I am anymore. ? This guacamole recipe is so easy and so delicious. I’ve seen a lot of “fancier” guacamole recipes out there,  but that just seems so unnecessary when traditional guacamole is soooo good!  What are some of your favorite avocado recipes?

Guacamole – Gluten Free & Vegan

Ingredients

Scale
  • 2 medium avocados
  • 1/2 cup red onion diced
  • 1 small lime juiced
  • 1/2 cup tomato diced
  • 1 tsp garlic powder
  • 1/4 cup cilantro chopped

Instructions

  1. Combine all of the ingredients in a large bowl and mash with a potato masher
