Brownie Cookie Bars – Gluten Free & Vegan
These gluten free and vegan brownie cookie bars are delicious! The bottom layer is a warm fudgy brownie and the top layer is a soft chocolate chip cookie.
When I first saw pictures of brownie cookie bars on Pinterest I couldn’t believe I had never thought of it myself! What a brilliant idea!
Brownies and cookies are two of my absolute favorite desserts so I knew I had to figure out an allergy friendly version of this wonderful dessert myself.
I already had an amazing recipe for chocolate chip cookies so I knew that would be the top layer. For the brownie layer I had a couple of options. I have a traditional fudgy brownie recipe that I thought might be too thick for the base.
I also have a recipe for deliciousbrownie cookies that are a little thinner than the fudgy Brownies so I thought they would be perfect for the bottom layer.
So I gave it a try tweaking just a few things from the original recipes to make it more “bar” friendly. They turned out incredible!!
I’m so excited to have this recipe added to my collection! They are the perfect combination of a soft chocolate chip cookie and a warm fudgy brownie.

Ingredients
For the Brownie Layer:
- 1/4 cup vegan butter, melted (I use “Earth Balance Soy Free Vegan Buttery Sticks”)
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 3 tbsp water
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup cocoa powder
- 1/2 cup gluten free all-purpose flour (I use “Better Batter“)
- 1/4 cup vegan semi-sweet chocolate chips (I use “Enjoy Life” brand)
For the Cookie Layer:
- 1 cup gluten free all-purpose flour (I use “Better Batter”)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 5 tbs vegan butter, melted (I use “Earth Balance Soy Free Vegan Buttery Sticks”)
- 1/4 cup maple syrup
- 1/2 cup coconut sugar, packed
- 1/2 tsp vanilla extract
- 2 tbs water
- 1/2 cup vegan semi-sweet chocolate chips (I use “Enjoy Life” brand)
Instructions
For the Brownie Layer:
- Preheat your oven to 350°F.
- In a large bowl, mix together melted vegan butter, maple syrup, water, and vanilla until combined.
- Add baking powder, salt, cocoa powder, gluten free all-purpose flour and mix well. Stir in chocolate chips.
- Pour batter into a greased 8×11 baking dish and spread evenly in the pan.*
For the Cookie Layer:
- In a large bowl, whisk together flour, baking soda, and salt.
- In a small bowl, mix the melted butter, maple syrup, coconut sugar, vanilla, and water until smooth.
- Add the liquid ingredients to the dry ingredients and whisk until well blended. Fold in the chocolate chips.
- Pour the chocolate chip cookie dough on top of the brownie layer in the pan. Gently spread evenly to cover the entire brownie layer.
- Bake for 30 minutes or until the cookie layer is firm and golden brown.
- Once completely cooled, cut into bars and enjoy!
Notes
You can use an 8×8 baking dish, but you will have thicker bars and need to cook them about 10 minutes longer.
