Easy Taco Soup – Gluten Free, Dairy Free

Ingredients

  • 1 lb ground beef, cooked and drained 
  • 1 onion, diced
  • 1 lime, juiced 
  • 1 4oz can diced green chilies 
  • 1 15oz can corn, drained
  • 1 15oz can diced tomatoes
  • 1 15oz can kidney beans, drained and rinsed
  • 1 15oz can pinto beans, drained and rinsed
  • 1 1/2 cups vegetable broth 
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning
  • 1 tsp salt

Instructions

  1. Add ground beef and chopped onion to a large skillet over medium high heat and cook until no pink remains and onions are soft (5-8 minutes).  Drain any excess grease.
  2. Serve with chopped cilantro, avocado, or your favorite corn chips.

To Make Taco Soup in the Instant Pot:

  1. Select the “Saute” button the Instant Pot with the “Normal” temperature setting.  Once the Instant Pot reads “Hot” add ground beef and chopped onion and cook until no pink remains and onions are soft (5-8 minutes).  Drain any excess grease.
  2. Select the “Bean/Chili” setting, which should default to “Normal” mode, “High Pressure” for 30 minutes.
  3. Serve with chopped cilantro, avocado, or your favorite corn chips.
