Easy Taco Soup – Gluten Free, Dairy Free
This Taco Soup is so easy to make and can be made in the Instant Pot or slow cooker. It uses simple healthy ingredients and is packed with so much flavor!
Taco soup is one of my favorite meals to make especially when the weather starts to get a little cooler.
It’s so easy to put together and has so much flavor. It’s also naturally gluten free and dairy free which is my favorite kind of meal!
The best part is that even my kiddos love it. That’s how you know a recipe is a winner in my house!
I typically make this taco soup in my Instant Pot. I love having this option because it means I can have a flavorful soup ready in about 40 minutes.
If you don’t have an Instant Pot, you can also make this recipe in your slow cooker. I’ve included cooking instruction for both!
I like to serve this taco soup with chopped cilantro, diced avocados, and of course some delicious corn chips.
So let’s talk about what you need to make it!
EASY TACO SOUP RECIPE INGREDIENTS:
- Ground beef: cooked and drained
- Onion: diced
- Lime: juiced
- Diced green chilies
- Corn: drained
- Diced tomatoes
- Kidney beans: drained and rinsed
- Pinto beans: drained and rinsed
- Vegetable broth
- Taco seasoning: You can use a packet or 2 tbsp homemade taco seasoning
- Salt
HOW TO MAKE EASY TACO SOUP:
How to Make Slow Cooker Taco Soup:
- Brown Beef: Add ground beef and chopped onion to a large skillet over medium high heat and cook until no pink remains and onions are soft (5-8 minutes). Drain any excess grease.
- Mix Together Ingredients: Add all ingredients to the slow cooker and stir to combine.
- Cook: Cook on low for 6-8 hours or high for 3-4 hours.
- Serve: with chopped cilantro, avocado, or your favorite corn chips.
How to Make Instant Pot Taco Soup:
- Brown Beef: Select the “Saute” button the Instant Pot with the “Normal” temperature setting. Once the Instant Pot reads “Hot” add ground beef and chopped onion and cook until no pink remains and onions are soft (5-8 minutes). Drain any excess grease.
- Mix Together Ingredients: Add remaining ingredients to the Instant Pot and stir to combine.
- Cook: Close the lid on the Instant Pot and make sure you are NOT venting. Select the “Bean/Chili” setting, which should default to “Normal” mode, “High Pressure” for 30 minutes.
- Release Pressure: Once the timer goes off, allow for a natural release or do a quick release using a towel to make sure you don’t get burned.
- Serve: Serve with chopped cilantro, avocado, or your favorite corn chips.
