Chocolate Chip Oatmeal Energy Bites – Gluten Free & Dairy Free

Coming up with snack ideas always seemed to be one of the hardest parts of having food allergies. Of course you can always have fruits and veggies, but sometimes you need more than that.
So I’ve been researching snack ideas for years and trying to come up with recipes that meet my allergy needs along the way. One snack idea that I kept seeing over and over again in different flavors were energy bites.
I loved this idea because you can essentially put whatever you want in them, customizing them to what your family likes best. The other great thing about them is that they are usually sweet and taste like you are having a dessert but you are getting all kinds of nutrients as well.
The recipe I’m sharing today is for a really simple oat, flax seed, and peanut butter based energy bite. They are so easy to make and are a great source of protein and fiber.
My whole family loves them and my three year old is completely satisfied eating these as dessert. She thinks she’s getting a special sweet treat and mommy knows she’s getting a healthy nutrient packed treat. It’s a win win!
This is my go to recipe for energy bites, but I can’t wait to try more flavor combinations. I’ve seen lemon, coconut, chocolate, strawberry, and all kinds of other delicious sounding versions of this.

Ingredients
- 1 cup gluten free quick cooking oats
- 1/2 cup flax seed meal
- 1/2 cup peanut butter
- 1/4 cup honey (you can use agave if you are strict vegan)
- 1/2 cup vegan dark chocolate chips (I use “Enjoy Life” brand vegan chocolate chips)
- 1 tsp vanilla extract
Instructions
- Add all ingredients to a large bowl and stir to combine.
- Refrigerate for 15 minutes. Roll into 2″ sized bites.
- Store in an airtight container in the refrigerator.
