Beef and Bean Chili – Gluten Free & Dairy Free

This beef and bean chili is the perfect dinner recipe for cold winter nights!  I love this easy chili recipe because the ingredients are so simple but the chili is packed with so much flavor!  It’s also naturally gluten free and dairy free which is always a bonus!

I love Fall in Missouri.  The trees are beautiful, the weather is perfect (inconsistent but perfect), and it means it’s time for some football.  

Which really means I get to break out all my fall recipes.  Chili, cornbread, football party snacks, and pumpkin everything!  

It also means it’s time to start planning my daughters Halloween costume!  I love any excuse to be crafty and while she’s little and can’t be embarrassed by mommies costume creations I’m taking full advantage.  

Last year she was the cutest little black cat you’ve ever seen, the year before she was Minnie Mouse, and her very first Halloween she was an adorable 2 month old bunny who was so warm and cozy in the costume she slept through the whole thing.  

I will admit I didn’t make her first costume because I was 2 months postpartum and all you mommies out there know there is just no time or energy for anything at that point.  

My hobbies consisted of feeding, changing, and rocking a baby, with a shower for myself occasionally sprinkled in when I was feeling adventurous!

During the holidays (and yes I consider Halloween a part of the holiday season) I’m always looking for new recipes to try out.  

I usually experiment with some new ways to use pumpkin and always want to try a new chili recipe.  

Hey, light bulb moment, maybe I should try some sort of pumpkin chili…is that a thing??  I can’t decide if that sounds delicious or gross?  

Maybe that will be next years chili adventure, but this year I wanted to find a delicious traditional chili.  

Nothing fancy, just a big ole bowl full of hearty beef and bean chili with some delicious seasoning. 

This chili recipe actually came from my dad. He had us over for a family dinner a few months ago and made this beef and bean chili and it was delicious!  

It was exactly what I was looking for in a good traditional chili.

It’s amazing paired with my cornbread muffins  and could be used as a base to make all different kinds of unique chili recipes.

I definitely want to try a vegan version of this chili so keep an eye out for that recipe!  

Chili is one of my favorite go-to’s during the fall and winter months because it is so easy to throw together. I would make it all year round if our Missouri summers didn’t get so hot!  

So let’s make some!

EASY CHILI RECIPE INGREDIENTS:

To make this beef chili recipe, you will need:

  • Ground beef
  • Black beans
  • Kidney beans
  • Minced garlic
  • Onion
  • Crushed tomatoes
  • Water
  • Chili powder
  • Ground cumin
  • Ground oregano
  • Salt

HOW TO MAKE EASY SLOW COOKER CHILI:

  1. Brown the beef:  In a large pan, cook ground beef until browned.
  2. Add everything to the slow cooker: Add black beans, kidney beans, minced garlic, chopped onion, crushed tomatoes, water, and seasonings to a slow cooker. Add beef and stir to combine.
  3. Cook: On high for 3 hours or low for 6 hours.

HOW TO MAKE EASY INSTANT POT CHILI:

  1. Brown the beef: Turn on the saute feature on the instant pot.  Once hot, cook the ground beef until browned.
  2. Add remaining ingredients: Add black beans, kidney beans, minced garlic, chopped onion, crushed tomatoes, water, and seasonings. Stir to combine.
  3. Cook: Close the lid and make sure you are NOT venting. Select the Bean/Chili setting which should be pre-programmed to cook for 30 minutes on the normal mode.

HOW TO FREEZE CHILI:

  1. Brown the beef: In a large pan, cook ground beef until browned.
  2. Add everything to a freezer bag: Combine all ingredients in a gallon-sized plastic freezer bag and freeze for up to to three months.
  3. Thaw: When ready to cook, thaw overnight in refrigerator.
  4. Cook: In a slow cooker on high for 3 hours or low for 6 hours.  In an instant pot, close the lid and make sure you are NOT venting. Select the Bean/Chili setting which should be pre-programmed to cook for 30 minutes on the normal mode.

That’s all there is to it!  Super easy!

Beef and Bean Chili – Gluten Free & Dairy Free

Ingredients

  • 1 1/22 lbs ground beef
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1/2 an onion, chopped
  • 2 14 oz cans crushed tomatoes
  • 1 cup water
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • 1 tsp salt

Instructions

  1. In a large pan, cook ground beef until browned.
  2. In a large pot or slow cooker, add black beans, kidney beans, minced garlic, chopped onion, crushed tomatoes, water, and seasonings. Add beef and stir to combine.
  3. If cooking on the stove, cover and cook on medium heat for 15-20 minutes stirring occasionally until heated through.
  4. If cooking in the slow cooker, cook on high for 3 hours or low for 6 hours.
  5. If cooking in an Instant Pot, cook ground beef until browned using the saute feature, add all ingredients to the pressure cooker, close the lid and make sure you are NOT venting. Select the Bean/Chili setting which should be pre-programmed to cook for 30 minutes on the normal mode.

To Freeze and Cook Later

  1. In a large pan, cook ground beef until browned.
  2. Combine all ingredients in a gallon-sized plastic freezer bag and freeze for up to to three months.
  3. When ready to cook, thaw overnight in refrigerator.
  4. Follow cooking directions above.
